Chocolate Souffle

Tak tau harus berkata apa2.. so langsung aja post resep ama foto aja...

Chocolate Souffle


4 eggs
100 g chocolate (at least 60% cocoa)
60 g butter

100 g powdered sugar

Preheat oven to 190°C.
Melt chocolate: break or chop the chocolate into roughly equal pieces and place in a heatproof bowl. Place the bowl in a saucepan containing hot water. When melted, remove from the heat, and gently stir to make sure that any unmelted gets melted and is smooth and creamy.
Add butter and yellow of the eggs.
Beat egg white with powdered sugar and mix it with the yellow egg-butter mixture.
Butter souffle forms and fill them about 3/4.
Bake for 8-10 minutes


Laporan: entah karena gw udah enek ama coklat atau salah ngocok telur, atau salah manggangnya.. cuma gw ga suka rasanya... gw lebih prefer Chocolate Mousse... tapi entah.. mungkin gw kudu ke resto yang jual souffle, cobain dulu rasanya harusnya kaya apa.. hehe.. CiaO!

Chocolate Mascarpone Brownies

Penasaran dari awal Feb kmrn buat resep ini, Chocolate Mascarpone Brownies... seharusnya topping atasnya pake ganache, cuma karena gw hari2 ini lumayan enek ama coklat, jadi gw ganti pake whipped cream aja n Chocolate Syrup atau Strawberry Syrup or watever u wanna add.. gw buat juga versi cupcakenya..

Chocolate Mascarpone Brownies

Brownies

227 g unsalted butter

85 g best-quality semisweet chocolate, finely chopped

1 cup white sugar (gw kurangin jadi 1/2 cup)

1/2 cup cocoa powder

1/2 cup mascarpone cheese, softened

3 large eggs, at room-temperature

2 teaspoons pure vanilla extract

1/2 cup all-purpose flour

1/4 teaspoon salt

Ganache

170 g best-quality semisweet chocolate, finely chopped

6 tablespoons whipping cream

40 g unsalted butter

  1. Preheat oven to 325°F; have ready a buttered 8-inch square glass cake pan.
  2. First, prepare the brownies.
  3. In a small saucepan, melt the butter and bring it to just below a boil; have the chopped chocolate in a mixing bowl--pour the hot butter over the chocolate and let stand for 30 seconds.
  4. Stir until chocolate is completely melted.
  5. Sift in the sugar and cocoa powder (I do this through a sieve, not with a sifter).
  6. With a wooden spoon, beat in the mascarpone, eggs (30 minutes on the counter brings them to room temperature) and vanilla, mixing until smooth.
  7. Gently fold the flour and salt into the batter.
  8. Pour batter into prepared pan and spread evenly--this is important since, if the batter isn't spread evenly, it won't bake evenly.
  9. Place into preheated oven and bake for 45 to 50 minutes, or until a tester comes out clean (45 minutes did it for me).
  10. Place pan on a cooling rack and let brownies cool for 10-15 minutes, while you now make the ganache.
  11. Place chopped chocolate in a mixing bowl; in a small saucepan, bring the cream and the butter to just below the boiling point, over medium heat.
  12. Pour this hot cream-butter mixture over the chocolate and let stand for 30 seconds, then stir until smooth; ganache is now ready to use and can be spread over the brownies.
  13. Should you wish to wait a bit, make sure the ganache is warm when you spread over the brownies, as it does firm up which makes spreading hard to do.
  14. Don't cut into the brownies until ganache has firmed up; I find it best to put the brownies into the fridge to speed this along; once the ganache is firm the brownies do not need to be kept in the fridge, though.

Cuppies with Color Mist

Umm.. minggu kmrn pas di gereja ada miskol 2 no hp tak dikenal.. takutnya customer Dogroo mau mandiin doggienya.. eh pas di telp balik, suaranya ga jelas.. Trus ga lama ada telp lagi dari no. yang sama.. ternyata orang pesen cupcakes.. hehe.. dia liat cupcakesku dari blog.. memang blog itu sarana iklan yang COOL.. :P

Namanya Cynthia, dia mau cobain cupcakesku trus mau dikasih anaknya juga..

Oiya, ada satu yang special... ada cupcakes yang frostingnya kaya rose.. n pink... itu pink nya gw pake semprotan color mist dari Wilton... :P

Apa yang membuat baker tambah gendud.. setiap kali buat kue pasti ada leftover sedikit.. hehe..

Iseng ga ada kerjaan, jadi belajar Adobe.. yah yang gampang2 dulu deh.. ini aja bikinnya lama banget.. nge-pathnya lama.. hehe... sekalian buat promosi juga... hehe..

Molten Chocolate Pudding

Dapet resep ini dari milis.. ada yang tanya ttg resep Melted Chocolate Brownies, eh malah dikirimin resep Molten Chocolate Pudding.. but anyway.. jadi bikin penasaran karena liat gambarnya yang menggoda.. trus pas liat resepnya ga ribet.. yep.. dicoba dey...

Molten Chocolate Pudding



200g dark chocolate, chopped
50g butter, chopped
4 eggs
1/2 cup sugar
2 teaspoons vanilla extract
1/4 cup flour, sifted
1 tablespoon cocoa, sifted
dusting of cocoa and cream to serve


Preheat the oven to 180°C. Spray a 6-hole large (Texas) muffin pan with oil.
Place the chocolate and butter in a bowl and microwave on high for 1 minute. Stir until melted.
Set aside.
Beat the eggs and sugar with an electric beater until pale and thick, about 5 minutes. Add the vanilla, flour and cocoa and beat for another 2 minutes.
Add the chocolate and butter mixture and beat for a further 5 minutes. (This mixture needs a lot of beating to incorporate air and make the puddings light.)
Spoon the mixture into the muffin pan to three-quarters full and bake for 10 minutes – the puddings should be very soft or gooey to touch. Carefully remove from the pan and place on individual plates.
Serve immediately with a dusting of cocoa and lightly whipped cream.

Serves 6

Dunno kenapa ini dibilang pudding, karena sama sekali ga pake gelatin or jelly or watever.. mungkin karena bagian dalemnya coklat leleh... well it sure tastes like heaven.. tidak melebih2kan.. but i love it.. kata andi ini the best cake yang pernah gw buat, lebih delicious than cupcakes yang biasa gw buat (bukan cupcakes ga enak lhow.. hehehehehe)

Kmrn juga gw bawain suli and inny, buat dicoba.. entah mereka suka ato ga.. :P

Bagian atasnya yang kering, itu yang unik.. sedangkan bagian dalamnya kaya cake but di tengahnya coklat meleleh.. luberrr.... (gila sampe skrg rasanya masih terasa di lidah)... PENASARAN???? SILAHKAN NGILER... HAHAHAHHAHAHA.....

Kmrn malemnya juga janjian ama Suli and Inny di TA... tadinya janji jam 8.. tapi karena u know, Jakarta kota maceettt... sucks.. jadi sampe TA jam 9, itupun Suli blum muncul.. Duluan sampe jadi langsung cari tempat duduk deh.. tadinya mau makan sushi di hachi2, cuma karena di rumah udah makan, lumayan kenyang, jadi mampir ke Delifrance aja... Sempet chattin ama Wiwin and Yon sebentar. Jam 9an Suli and Inny sampai.. akhirnya.. gw takut aja mereka sampe TA tutup :P

Btw, here what we had for supper (bukan dinner lagi kayanya...) :

Ini pesenan Suli n Inny, namanya fondant sumthing.. lupa juga.. hehe

Makanan okay but karena udah kenyang semua, jadi ga abis semua..
Btw di sini ada jual ECLAIRs, ring a bell?? dan harganya nutss.... 6 for Rp49.900++ Can u imagine?? dan eclairsnya very thin.. thin and thin..

The Crepes

Yayyy... kmrn malem coba resep bikin Crepes yang garing yang kaya di mol2 itu (resep mbak Ayin Norway).. ternyata gampang bangetttt... (tapi kebanyakan goreng itu crepes, gw jadi serasa kaya tukang martabak.. hehe)...

The Crepes
Bahan :
100 grm tepung terigu
1 sdm gula
1 butir telur
50 ml susu
50 grm margarine, lelehkan
100 ml air ( kl krg tambahin lg )
Bahan Isian: Pisang, meises, nutella, keju, dll (terserahhh)

Cara membuat :
Campurkan semua bahan crepes, jangan sampai ada gumpalan.
Dadar tipis diatas wajan teflon ato wajan khusus crepes tanpa olesan margarine
Beri isian sesuai selera
Lipat menjadi 4.

Kemaren foto proses gorengnya... (ikut2an ci ipii).. hehe

Bikinnya simple, makannya ga cukup satu.. makan kulitnya tanpa isian aja juga enak.. nyum nyum... 2 anjing di bawah ini aja sampe ngiler terus... (Note: anjing dikasih yang ga ada isi, karena anjing ga boleh makan coklat!!! perhatian buat yang punya doggie.. WOOF!)

Kmrn2 ada pesenan dari Ibu Emmy, mungkin dia tau dari liat2 di blogku... dia pesen Choco cupcakes with marshmallow filling, trus juga sewa standtree...

Pas kmrn minggu pagi anter kuenya di daerah kemanggisan... diriku terpana melihat rumahnya... bagusssss banget.. hehe... trus asri juga.. di dining room nya ada suara2 air mengalir... pokoknya cozy banget rmhnya.. Kontemporer Minimalis (bener ga yah?). Pengen foto2 buat inspirasi, tapi ga enak, jadi ga jadi deh... hiks nyesel...

Happy burddaayyy Dear

Tgl 12 Feb, yep its my darling's bird day.. and he's.. umm.. old enuf... ahahhahahhaha...
And i made a cake for him.. very special one, why is so special? becoz i never try the recipe before.. ahahaha.. at first i planned to make him Tiramisu, but after browsing alot of recipes, i found one recipe yang so so menarik... :P that is Chocolate glazed Hazelnut Mousse Cake, and i will post the recipe here.. so here it is:

Chocolate-Glazed Hazelnut Mousse Cake

2 tablespoons hazelnuts, toasted and skins rubbed off

3 tablespoons sugar

1/2 cup all-purpose flour

57 g unsalted butter, softened

2 tablespoons unsweetened Dutch-process cocoa powder

1/8 teaspoon salt

1 teaspoon unflavored gelatin

3 tablespoons cold water

1/2 cup chocolate hazelnut spread such as Nutella

1/2 cup mascarpone

1 1/2 cups chilled heavy cream

2 tablespoons unsweetened Dutch-process cocoa powder

3 tablespoons sugar

5 tablespoons heavy cream

100 g fine-quality bittersweet chocolate (not unsweetened), chopped

Direction:

  1. For shortbread base: Put oven rack in middle position and preheat oven to 350 degrees F. Invert bottom of springform pan (to make it easier to slide shortbread base off bottom), then lock on side of pan and line bottom with a round of parchment paper.
  2. Pulse hazelnuts with sugar in a food processor until nuts are finely chopped. Add flour, butter, cocoa, and salt and pulse just until a dough forms.
  3. Press dough evenly onto bottom of springform pan with your fingers. Prick all over with a fork, then bake until just dry to the touch, about 18 to 20 minutes. Transfer base in pan to a rack to cool completely, about 30 minutes. Remove side of pan and carefully slide out parchment from under shortbread, then reattach side of pan around shortbread base.
  4. Make mousse while shortbread cools: Sprinkle gelatin over water in a 1- to 1 1/2-quart heavy saucepan and let stand until softened, about 5 minutes. Heat gelatin mixture over low heat, stirring, just until gelatin is melted, about 2 minutes. Whisk in chocolate hazelnut spread until combined and remove from heat.
  5. Whisk together mascarpone and chocolate hazelnut mixture in a large bowl. Beat together cream, cocoa powder, and sugar in another large bowl with an electric mixer at low speed until just combined, then increase speed to high and beat until cream just holds soft peaks. Whisk one third of whipped cream into mascarpone mixture to lighten, then fold in remaining whipped cream until well combined. Spoon filling onto shortbread base in pan, gently smoothing top, then chill, covered, at least 3 hours.
  6. Make ganache and glaze cake: Bring cream to a simmer in a small heavy saucepan and remove from heat. Add chocolate and let stand 1 minute, then gently whisk until completely melted and smooth. Transfer ganache to a small bowl and cool, stirring occasionally, until slightly thickened but still pourable, about 20 minutes.
  7. Run a warm thin knife around inside of springform pan, then remove side. Slide cake off bottom of pan and transfer to a serving plate. Pour ganache onto top of cake and spread, allowing excess ganache to drip down sides.

Choco Cupcakes with Marshmallow Frosting

Jakarta lagi maceet n banjir, saya akhirnya sampai juga di rumah, walaupun kudu jalan kaki dulu dari toKo ke gedung deket toko, karena mobil di parkir disitu..

Anyway, semalem tangan gatel lagi, pengen buat cupcakes yang beda dari sebelumnya... Cupcakes yang ada fillingnya!!!!!

Kali ini yang gw buat fillingnya Marshmallow Cream (dari kemaren2 penasaran rasanya), dan ternyata rasanya pas banget buat cupcakes chocolate.. not too sweet.. and.. ga bisa dijelasin dengan kata2 deh... :P u shud try it!

Here is the recipe for Marshmallow Cream :

3 egg whites
2 cups light corn syrup (di ranch market ada)
1/2 teaspoon salt
2 cups icing sugar (confectioner's)
1 tablespoon vanilla extract

Directions :
  1. In a large bowl, combine egg whites, corn syrup and salt; beat with mixer in high speed for 10 minutes or until thick.
  2. Add in icing sugar; beat on low speed until blended.
  3. Beat in vanilla until blended.
  4. Use this in any recipe called for marshmallow creme.
  5. *NOTE* This recipe makes a lot of fluff, but may be frozen for later use, just remove from freezer and stir well with a spoon, or it can be refrigerated for up to 1 week, just make sure to stir well with a spoon before using.
Di Frost pake Marshmallow juga atasnya, taburi heart sprinkles
Sprinkles yang mahalnya buju buneng :P

Kue Sus

Kmrn malem juga abis latihan bikin buttercream rose, tangan masih gatel pengen ngapain gitu.. dan saya masih penasaran ama kulit sus (orang2 bisa ngembang sekali, kok gw ga terlalu yah), jadi nekad buat lagi.. practice make perfect rite?

And this time, kue susku mengembang besar... dan pas bikin vla nya sangking udah ngantuk, jadi ngasal.. hehe.. ga pake takeran lagi.. kira2 aja... untungnya jadi.. :P

And Andi bilang "Ini kue kamu yang paling enak dibanding yang lain, karena aku suka kue basah Gin, kurang suka yang namanya cake".. hiks hilang deh testerku satu orang ... hahahha

Buttercream Rose

Semalem, i've got nothing to do...jadi karena baru beli paku mawar, dll nya... kepengen latihan buat rose dg buttercream... Hasilnya masih berantakan, especially saat ambil pake gunting, lalu ditaruh, masih berantakan banget... ato karena buttercreamku kurang konsisten, jadi nempel2 di pakunya (setelah gw pikir2, masuk logika sih), jadi lain kali buttercreamnya gw masukkin kulkas dulu aja sebentar, baru gw pake menghias... lesson no. 1 :P

Mawarnya masih setengah kuncup gitu deh

Choco Frosted Coco KrunchzZ

Weks, baru kali ini ada yang pesen coklat ditimpa coklat.. Ria (iya Ria yang biasa itu lhow) hehehe...
Setelah berpikir keras, dia akhirnya jadi pesen coco krunch dibanding cornflakes... saya mah penjual, ikutin maunya pembeli aja dey.. jadi selamat menggendudkan diri riaaa... hahahhaahha....
Kmrn pas ada sisa kan gw coba, rasa menurut gw sih hampir sama, tapi tekstur coco krunch ini lebih keras daripada cornflakes.. ya iyalahh... :P
